not sure how forking works when two different values are written concurrently.

So 2 or more values with the same “parent” creates a fork.

I take it that each key in the map can have zero or more values

IIRC 1 or more values (otherwise it’s a register).

how are the values ‘indexed’ or

These are indexed as the register is (it is a load of registers), so using hash values and parents. So no index as such, you need to traverse start to finish/find (0n) @Anselme or @bochaco know more though.
