I’ve been thinking about this as another weekend project for an old laptop kicking about - Googled a bit but couldn’t find a nice how to guide. Do you know of any tutorials for this kind of task?

Not sure… PiVPN project is amazing, I’d recommend using a Pi.
You could download their install script and look through the lines to find out the process of install, you could get lucky and the script might work on your Linux box.
There are also downloads at the community download page buy I’ve no experience here.

Cool, I’ll have a look. I have a VPN I use on certain devices but was thinking setting up a router might be a more robust solution.

Instead of OpenVPN I recommend Wireguard.
