I’m a huge fan of this concept (re Framework laptops). Everything should be reparable and modular. I’m also a fan and a customer of Fairphone who aim to keep models working for seven years with firmware upgrades even when they’re not supported and also paying workers a living wage. Now available in the US with /e/ OS by the way. (I’m not a fan of that OS’s name though.)
Linus Tech Tips have done a few videos on Framework. Linus even invested 1/4 million in the company because he wants it to succeed
Are they at the point of competing with midrange phones from the likes of Samsung or Apple?

Is the OS open source?

I’d say so, although mine is four years old now and I don’t know about the later models. The cameras aren’t as good though.
Stock Fairphone OS is modified Android but /e/ is fully open source.
