If I will send MAID to someone, will he be able to look up my address and see how much SMC I have in total and what past transactions I have made?

No this is not part of SAFE, there is no ledger associated with safecoin. Although it is possible to maintain a receipt of single transactions if the sender wishes. That is likely not part of V1 though.

Safecoin will be a privacy coin and transaction history will not exist. Therefore, others will not be able to derive previous transactions, balances, etc.
However, maidsafecoin (MAID) is just a token ahead of launch. It has the same traceability issues as Bitcoin, as it is an Omni token which is stored on the Bitcoin blockchain.
